Once hooked, a flounder will struggle, but only in a relatively narrow field. The good side is you won’t endure any long runs, but this proximity also presents a challenge: it’s easy to get sloppy with a fish that basically flops and tugs a rod length from the boat. Suffice it to say that a flounder will take full advantage of any relaxed pressure, so keep that rod tip up. Also, resist the urge to sling a big flounder aboard. Even a solid hook set attempt occasionally falls short and the fish may be swimming around barely pinned by the hook. Lastly, handle with care and keep fingers clear of the flounder’s needle-like teeth. Even a small flounder will water your eyes if his choppers find their mark. The eastern Gulf Coast offers numerous opportunities for bagging your flounder dinner, but take time to learn the proper fillet technique. Remember that there are two filets on the top (colored) side and two more on the lighter underside. Also, keep your fillet knife at a 45-degree angle when cutting filets away from the rib cage.
